The type species of plants of the genus Mordovica (Echinops) of the Asteraceae family. A perennial herbaceous plant 1-2 m tall. The root is fleshy taproot.

The stem is single, erect, branched at the top, rounded, glandular-pubescent, 70-150 cm tall. The leaves are alternate, pinnately dissected, sessile (except rosette), with a stem-enclosing base, 10-20 cm long, 4-10 cm wide. Dark green on top, roughened with glandular hairs, whitish on the bottom, spiny or prickly on the edge.

The flowers are tubular, collected in large spherical inflorescences with a diameter of 3-5 cm. The corolla is pale blue or white, the anthers are dark blue. Blooms in June-July.

The fruit is a cylindrical achene 6-8 mm long with a cup-shaped tuft. It bears fruit in July-September.

An outstanding late-summer honeyeater. A fatty oil suitable for the manufacture of drying oil is obtained from the fruits. In some countries, mordovnik is used for food like artichoke.
